Those who celebrate Christmas know the food is just as important as the gifts, music or decorations. For many it is the main event of the day, and for Indians it is no different. Food is always center stage at any occasion, and many have also come to embrace the tradition of Christmas dinner (with an Indian twist of course).
We all have different ways of cooking our festive feast, whether you marinate the turkey in herbs, orange or even deep fry it (a new trend apparently!). And whilst a plate of meat with cranberry sauce and roast potatoes may sound perfect, for many South Asians it can seem a bit bland. Why not get creative this year with an Indian rendition of the traditional turkey instead? If you love the flavours and spices of east, this is a great way of incorporating a taste of India into your Christmas dinner.
Indian Spiced Turkey
1 10 lb turkey
2 tbs soft butter
3 red onion, minced
2 tsp cracked black pepper
1 tsp crushed red chilli flakes
1 tsp cumin powder
1 tsp fresh ginger minced
1 bulb of fresh garlic
1/2 tsp tumeric
1/2 tsp corriander powder
1/4 tsp ground cardamom
1/4 tsp ground cloves
Salt to taste
Preheat the oven to 325 degrees.
Heat butter in a pan, add onion, garlic, chilli flakes, cumin, ginger, cardamom and cloves and turmeric. Saute on light heat stirring for 5 minutes (be careful not to burn the mixture).
Blend mixture and brush the turkey all over generously with the spiced butter mixture. Marinate the turkey two days before cooking this should give the spices time to soak into the meat.
Cover with an aluminum foil tent and roast in the preheated oven, for 20 minutes per pound. Whilst roasting baste frequently with the spiced butter. Remove tent for the last 30 minutes of roasting, rest, and enjoy!
